Cannellini and Cabbage Soup
1 tblspn olive oil 3 cups thinly sliced cabbage 2 carrots sliced 6 garlic cloves minced 1 tspn dried thyme 1/4 tspn black pepper 2 cans (14 ounces each) low sodium chicken broth 1 can (14 1/2 ounces) no salt added diced tomatoes 1 cup water 1/4 cup tomatoe paste 2 cans (15 ounces) cannellini beans rinsed and drained
Prep
1.In a large pot heat olive oil over hihhg heat, add cabbage, carrots, garlic, thyme and pepper cook 2-3 mins
2. Stir in broth, undrained tomatoes, water, an tomatoe paste. Bring to a boil then reduce heat.. simmer cover for 8 mins or untill veggies are tender stirring occasionally
Mash half of the beans with a fork and add all the beans to the pot. Bring to a quick boil .. stir .... and serve
about 164 calories ... 1 grams protein... serving 2 cups
