Sweet Potato Sheppard's Pie5 large sweet potatoes 1 package lean ground chicken 1 large can sweet corn 1/2 brocolli 1/2 cauliflour 1/2 red and green pepper 1 sprig of green onion(shalotts) 1 peg fresh gralic (1 tlbspn dry garlic powder) 1 tlbspn salt 1 tlbspn black pepper 1 tlbspn mixed herbs 1/4 cup margrine Olive oil PAM Step 1 the potatoes Boil potatoes till soft, in and bowl mash till completely broken then mix in salt, black pepper and tspn garlic powder and then margrine and mix till smooth. Step 2 the meat Heat the frying pan add 3 pam sprays or 1 tlbspn of Olive oil, chop the green onion and add to heated oil. Mix in the ground chicken making sure to seperate the chicken in to small bits. Season with tspn salt, black pepper and oregano LET FULLY COOK BEFORE adding chopped red and green pepper simmer till completely light brown. Step 3 the veggies In a saute pan add 1 tlbspn of Olive oil and add chopped brocolli and cauliflour. Stir in the mixed herbs and saute for 5 mins. Step 4 the ensemble In and deep baking dish pour in and pat down ground chicken mixture, drain sweet corn and line on top of the meat then added the saute veggies and then add the sweet mashed potatoes bake for 20 mins !!! UMMM COMFORT FOOD! THIS WILL BEAT THE WINTER BLUES
